There are so many wonderful recipes of meatballs in tomato sauce out there, but this is my slightly modified version that we normally eat without pasta as it already has rice in it.
What you will need
- 1 pound ground beef
- 4 tb. sp. Jasmine rice
- Onion powder
- 1 chopped carrot
- 1 chopped red onion
- 2 cloves of finely chopped garlic
- 1 can of diced or whole tomatoes
- Dry oregano
- Dry basil
- Medium bunch of chopped parsley
- Cooking olive oil
- Salt and pepper
Mix in a medium bowl ground beef, rinsed jasmine rice, bit of onion powder and 4 tb. sp water. Warm up olive oil in a frying pan and start frying small sized meatballs from all sides. Remove them from the pan and in the same pan simmer onions, carrots and garlic for about 10 minutes. Add meatballs. Fry together for 2-3 min and add canned tomatoes, salt and pepper. Reduce the heat and let it cook for about 20 minutes. Then add oregano and basil, cook another 5 min and add parsley. Stir everything together, let it cook for 4-5 min and the delicious meatballs are ready to eat!
