Broccoli Salad with Raisins and Pine nuts

Lately I’ve been trying to incorporate more fresh broccoli in our meals instead of just steaming or roasting it.  So, I took broccoli, chopped it and added ingredients that I had at hand. This salad has become our absolute favorite.  This is probably the easiest salad I have ever made.  Minimum effort, maximum deliciousness 🙂 It’s crunchy, yummy and full of healthy goodness.

Ingredients:

  • 2 fresh broccoli “trees”
  • ½ cup of raisins
  • ½ cub of pine nuts (could be replaced with any other nuts of your choice)
  • 2 table spoons of mayonnaise
  • Salt to taste

Cut broccoli florets is small pieces.  Add raisins, pine nuts, mayo and salt.  Mix it all well and ready to serve!
