This is a perfect meatless meal that mostly requires pantry items that’s very easy to put together. It goes very well with rice, fried potatoes or topped with parmesan.
Serves 4-6, prep and cook time 30 min:
🌱 1 red onion finely chopped
🌱 2 garlic cloves, chopped
🌱 1 can of crushed tomatoes (I use ones in a glass jar)
🌱 3/4 cup of red fast cooking lentils
🌱 1 can of kidney beans
🌱1 can garbanzo beans
🌱 small bunch of chopped cilantro
🌱 your favorite spices – I use Georgian Adjika and dried thyme
Simmer onion and garlic in olive oil for 3-4 min then add crushed tomatoes and 1 cup of water. Let it cook on medium for 10 min, add lentils. After 10 min add kidney beans, garbanzo beans, chopped cilantro, spices and salt. Let it cook for another 10 min and ready to serve.
