These crispy pan-fried cornbread patties with mozzarella are a quick snack for when you (and the kids) come back from camp, school, work, or the pool. 😋 One of my favorite snacks, I hope you'll love it too!
Ingredients:
2 cups stone-ground cornmeal (white or yellow, I prefer white😊)
S.Pellegrino sparkling water or any other sparkling water or soda without flavor (substitute with regular water plus 1 tsp baking soda)
1 cup shredded mozzarella
Salt to taste (about 1 tsp)
Oil for frying
Step 1 -
Combine 2 cups of cornmeal with approximately 1-1.5 cups of sparkling water (or plain water with 1 tsp baking soda).
Knead for a few minutes until well combined.
Add salt and about 1 cup of shredded mozzarella. The dough should be thick enough to form into round or oval patties.
Step 2 -
Heat oil in a pan over medium heat.
Fry the patties on both sides until crispy, golden brown, and cooked through (about 5-7 minutes per side).
