This might be my favorite childhood meal, the ultimate comfort food, although when I was growing up micro greens were not really a thing, but they go so well with this combo. These fried patties are not your regular burger patties, so be generous with soaked, crumbled bread in the ground beef. It makes these thoroughly fried, well done patties, quite fluffy and delicious. we love it with mashed potatoes, but any other vegetable, pasta, or rice side dish will be perfect too.
Grocery list (serves 2-4):
Beef patties:
✔️2 pounds of ground beef (we love grass fed) ✔️Italian sandwich bread, 4-5 slices ✔️1 egg ✔️Onion flakes
For mashed potatoes: ✔️Gold Potatoes ✔️Cream (or milk) ✔️Butter ✔️Microgreens to top
How to:
Soak the bread slices in warm water and then blend in a food processor. In a bowl, mix ground beef, bread, 1 egg, 1 tablespoon of onion flakes and 1 teaspoon of salt. Form into round, 1 inch patties, and fry in olive oil well form both sides.
for mashed potatoes – boil peeled and sliced potatoes in water until really well done. Pour out the water, add 2-3 tablespoons of water and start mashing. Once potatoes are all well mashed, start adding cream or milk, until you reach your preferred creaminess, and add salt to taste.
Serve patties with mashed potatoes and top with micro greens. Not only do they look beautiful when plated, they are delicious and full of vitamins too.
