These delicious pan fried rice cakes are pretty much in repeat in our house. They are simple to make and taste delicious. They can be a great snack or can easily transform into dinner with added tuna salad, or baked salmon. It's better to use the leftover rice that's a day old, but we love it so ouch that I cook rice specially to make these rice cakes.
Ingredients (makes about 10-12 rice cakes):
1 cup rice, cooked
1 egg
3 tbsp flour
2 tsp salt
To garnish: soy sauce, scallions, Thai basil, furikake seasoning
Knead rice, egg, flour and salt in a bowl. Form into round rice cakes and fry in vegetable oil on medium heat, for about 3-4 minutes each side, until crispy.
Garnish with chopped scallions or Thai basil and dip in soy sauce. These rice cakes are a great side to baked fish, tuna salad, or just on their own.
