Weeknight dinner cooking can be tough, and Fridays and weekends are especially hard! Even the simplest recipes take effort, but it’s always worth it when it’s appreciated. If you’re cooking family dinner tonight, try this Soy Honey Sauce Chicken— it’s easy and delicious!
Serves 4-6 | Cook time: 30 minutes
Ingredients:
3 medium chicken breasts, sliced
3 medium yellow potatoes, cubed
1 small broccoli, cut into florets
1/2 cup roasted cashews or peanuts
Sauce:
8 tbsp soy sauce
2 tbsp honey
4 garlic cloves, chopped
1 tsp ginger powder
1 cup vegetable or chicken stock (or water)
1 tbsp corn starch
1 tbsp sesame oil
Method:
Step 1: fry chicken in oil until white on all sides.
Step 2: add potatoes, cover, and cook on medium heat for 7-8 minutes. Remove the lid and cook another 7-8 minutes until the potatoes are fork tender but with a bit of crunch.
Step 3: add broccoli florets and cashews (or peanuts), cook for a few more minutes.
Step 4: while everything is cooking in a pan, whisk together the sauce ingredients. Add the sauce to the pan, stir, and cook until it thickens. Adjust salt to taste (be mindful of the soy sauce as it can be quite salty).
Step 5: serve with rice or enjoy as is!
